AB RÉSUMÉ : L’objectif de cet article est d’approfondir les règles qui déterminent et réglementent l’attitude conversationnelle (sujet abordé, discours, ton et traitement, etc.) à table au XIXe siècle, selon quatre manuels espagnols de civilité. Les manuels de civilité, en tant que source extralinguistique, conduisent à obtenir une image plus précise du comportement verbal dans un temps donné, car les règles prescrites sont contextualisées situationnellement. Ils reflètent donc des préceptes sociaux, qualifiés d’idéaux sociaux d’une époque.
AB ABSTRACT: The objective of this article is to delve into the rules that determine and regulate the conversational attitude (subject undertaken, speech, tone and treatment, etc.) at table in the 19th century, according to forth Spanish textbooks of civility. The manuals of civility, as an extralinguistic source, lead to obtain a more precise image of the verbal behavior in a given time, because the prescribed rules are situationally contextualized. They therefore reflect social precepts, described as social ideals of an era.
