Abstract
En los últimos años, las tendencias de consumo y compra de los consumidores han experimentado cambios, pues no solo se conforman con cubrir sus necesidades sino que se preocupan por aspectos sociales, económicos y medioambientales. Con respecto al sector lechero, estas tendencias se han visto reflejadas en un aumento del consumo de bebidas vegetales en detrimento del de la leche de vaca. Esto es, supuestamente, debido a aspectos sociales como el bienestar animal y la concienciación medioambiental, así como por razones relacionadas con la salud, ya sea por intolerancia a la lactosa o por la elección de llevar un estilo de vida aparentemente más saludable.
Con este Trabajo de Fin de Grado se ha propuesto analizar mediante un estudio a una muestra representativa del archipiélago canario, qué factores son los que realmente influyen en estos consumidores a la hora de decidir consumir leche de vaca o bebidas vegetales, así como la importancia que le es otorgada al bienestar animal en el momento de decidir dicho consumo. Como resultado, se ha obtenido que la gente no escoge un tipo de leche u otra por atributos como el bienestar animal, la ecología, la salud o el sabor, como se podía pensar. Su elección depende del precio y de la percepción de calidad que tengan de ella.
In recent years, consumer consumption and purchasing trends have undergone changes, since they are not only satisfied with meeting their needs, but are also concerned with social, economic and environmental aspects. With respect to the dairy sector, these trends have been reflected in an increase in the consumption of vegetable drinks to the detriment of cow's milk. This is, supposedly, due to social aspects such as animal welfare and environmental awareness, as well as for reasons related to health, due to lactose intolerance or the choice to lead an apparently healthier lifestyle. With this End-of-Degree Project, it has been proposed to analyze through a study a representative sample of the Canary archipelago, what factors are really influencing these patients when deciding to consume cow's milk or vegetable drinks, as well as the importance that it is granted to animal welfare at the time of deciding such consumption. As a result, it has been demonstrated that people do not choose one type of milk or another for attributes such as animal welfare, ecology, health or taste, as one might think. Their choice depends on the price and the perception of quality they have of it.
