| dc.description.abstract | Food allergy is an immunological disease caused by various types of hypersensitivity reactions. It is characterized by an exacerbated response to an ingested antigen called allergen which, in severe cases, can lead to serious responses such as anaphylaxis or even death. The intestinal epithelium plays an active role in both allergic sensitization and during the effector phase. In addition, dietary and lifestyle changes have introduced thousands of harmful substances that damage the intestinal epithelium, predisposing the patient to the development of allergies or aggravating the symptoms of existing allergies. On the other hand, factors derived from diet and microbiota, such as short-chain fatty acids (like butyrate) have a protective and reparative role against damage, as well as the stimulus of immunetolerance. For this reason, we have developed a model of chronic intestinal damage based on the addition of the allergenic protease Der p 1 on spontaneously differentiated Caco-2cells. | dc.description.abstract | La alergia alimentaria es una enfermedad inmunológica provocada por varios tipos de reacciones de hipersensibilidad. Está caracterizada por la respuesta exacerbada frente a un antígeno ingerido denominado alérgeno que, en los casos más graves, puede desembocar en respuestas fatales como la anafilaxia. El epitelio intestinal juega un papel activo tanto en la sensibilización alérgica como durante la fase efectora. Asimismo, los cambios en la alimentación y en el estilo de vida han introducido miles de sustancias nocivas que dañan el epitelio intestinal, predisponiendo al paciente al desarrollo de alergias o agravando los síntomas de las ya existentes. Por otra parte, factores derivados de la dieta o producidos por la microbiota, como los ácidos grasos de cadena corta (el butirato entre otros) tienen un papel protector y reparador frente al daño, además de estimular la tolerancia inmune. Por este motivo, hemos desarrollado un modelo de daño crónico intestinal provocado por la adición de la proteasa alergénica Der p 1 sobre células Caco-2 diferenciadas espontáneamente.
