Abstract
Actualmente, respecto a la educación en dietética y nutrición, se plantean retos sociales derivados de tres grandes problemas. El primero de ellos se produce por la segmentación del conocimiento que aísla disciplinas sociales, de salud y científicas, de áreas propias de las artes y las humanidades. El segundo, se deriva de la atención a la salud desde la perspectiva asistencial, difuminando los enfoques promotores de salud, centrados en el tratamiento y prevención de la enfermedad en lugar de orientar hacia la vivencia de la salud como experiencia humana. Esto es, anteponiendo y promoviendo en el discurso social la nutrición clínica por encima de una dietética vivencial. El tercero se refiere a la educación científica con la que se promueven discursos técnicos y cientificistas en entornos socialmente populares. Currently, there are social challenges arising from three major problems: first, the segmentation of knowledge that isolates social, health and scientific disciplines from areas of the arts and humanities; second, health care is assumed from the perspective of assistance instead of health promoting approaches. It focuses on the treatment and evasion of disease rather than focusing on the experience of health as a human experience. That is, through introduce clinical nutrition in the social discourse. Third, scientific education, which promotes technical and scientific discourses in socially popular environments. The proposal of this research is to address these problems from the study of dietary education since it addresses human phenomena in the fact of eating, living health and understanding the world through science. The objectives of this research are based on defining a theoretical model that facilitates the study of community based dietary education through the definition of the concept dietary education and the identification of its general elements and specifically what are them in the community level. Currently, the community space has a great educational interest in politics.
