Abstract
Los comedores comunitarios son fundamentales para garantizar la seguridad alimentaria de las poblaciones vulnerables. Este estudio analiza su gestión estratégica, operativa y comercial, enfocándose en la estructura organizativa, la distribución de alimentos, el alcance y el impacto comunitario. Mediante un enfoque de métodos mixtos, se realizaron encuestas y entrevistas a administradores de 18 comedores comunitarios en Quito. El análisis exploró la relación entre la planificación estratégica y las operaciones diarias. Los comedores se clasificaron en cuatro modelos de gestión: organizaciones sin fines de lucro, liderados por la comunidad, gestionados por el gobierno y entidades híbridas. Los resultados muestran que una planificación eficaz mejora los procesos internos y la calidad del servicio. Se evidenció una distribución de roles basada en el género: las mujeres se encargan principalmente de la administración y el servicio, mientras que los hombres están más involucrados en las tareas de cocina. Esto refleja brechas de capacitación, especialmente en atención al cliente, lo que resalta la necesidad de programas de fortalecimiento de capacidades. Para la comunicación y promoción, los comedores utilizan una combinación de herramientas digitales y métodos comunitarios para involucrar a los beneficiarios y atraer recursos. Su sostenibilidad depende de la autogestión, las donaciones y las alianzas con empresas privadas, escuelas y organismos gubernamentales. En conclusión, alinear la estrategia con las operaciones, mejorar la capacitación, promover la equidad de género y adoptar herramientas digitales son claves para mejorar la efectividad y sostenibilidad de los comedores comunitarios en Quito.
Abstract Community kitchens are vital for ensuring food security among vulnerable populations. This study analyzes their strategic, operational, and commercial management, focusing on organizational structure, food distribution, outreach, and community impact. Using a mixed-methods approach, surveys and interviews were conducted with administrators from 18 community kitchens in Quito. The analysis explored the relationship between strategic planning and daily operations. Kitchens were categorized into four management models: non-profits, community-led, government-run, and hybrid entities. Results show that effective planning enhances internal processes and service quality. A gender-based role distribution was evident: women mainly handle administration and service, while men are more involved in kitchen tasks. This reflects training gaps, especially in customer service, highlighting the need for improved capacity-building programs. For communication and promotion, kitchens use a mix of digital tools and grassroots methods to engage beneficiaries and attract resources. Their sustainability depends on self-management, donations, and partnerships with private companies, schools, and government agencies. In conclusion, aligning strategy with operations, enhancing training,promoting gender equity, and adopting digital tools are key to improving the effectiveness and sustainability of community kitchens in Quito.
