Abstract
Las enfermedades alérgicas están aumentando en todo el mundo, de tal forma que se ha definido como una epidemia alérgica, principalmente, la relacionada con la alergia respiratoria. Posteriormente se ha descrito como la segunda ola de la epidemia alérgica la asociada con alimentos. Debido a esta prevalencia creciente, se han realizado muchos trabajos con el objetivo de conocer sus mecanismos, las características y los factores de riesgo, entre otros, para prevenir su desarrollo. En este sentido, se han dirigido algunos trabajos en la población general a través de estudios de cohortes que se han seguido en el tiempo para descubrir qué circunstancias o agentes contribuyen al desarrollo de la sensibilización y la posterior enfermedad clínica. Se conoce que la alergia a pólenes y alimentos de origen vegetal están íntimamente relacionados, variando con la edad y la zona geográfica. Así, tradicionalmente se distinguen dos tipos de alergia a alimentos, tipo I y tipo II. El tipo I se desarrolla por una sensibilización primaria a través de la vía digestiva y suelen desencadenar reacciones alérgicas sistémicas y graves. La alergia a alimentos de tipo II, se origina secundariamente a la sensibilización a los aeroalergenos como consecuencia de la reactividad cruzada entre ambos y suelen producir reacciones alérgicas más leves, típicamente orofaríngeas...
Allergy is a growing disease worldwide, in such a way, it has been defined as allergy epidemic, mainly related to respiratory allergy. Later, the second allergy wave has been defined as the associated to food allergy. As a consequence of this growing prevalence, the aim of several studies has been to discover the mechanisms, characteristics and risk factors, among others, in order to prevent from allergy development. In this respect, some based population studies have been carried out through cohorts who has been followed over time to discover under which circumstances or agents contribute to sensitization occurrence and behind clinical disease. Pollen and vegetal food allergy are closely related, and they vary with age and the geographical area. Therefore, two types of vegetal food allergy have been defined: I and II. The sensitization to food allergens takes place through the digestive tract in the first, and triggers general and severe allergic reactions.
