- Enhancing both consistency and accuracy on game meat quality parameters implies the implementation of new technologies.
- The metabolic profile of game meat obtained by High-Resolution Magic Angle Spinning Nuclear Magnetic Resonance (HR-MAS NMR) Spectroscopy together with multivariate analysis is a powerful tool to characterize game meats according to the species of origin.
