Abstract
Los controles y la legislación que actualmente garantizan una seguridad alimentaria a los consumidores se hallan en continua evolución y desarrollo, buscando siempre nuevas formas de detectar actividades fraudulentas que pueden suponer un riesgo para la salud de las personas. Ello es debido a que estas actividades, que buscan un beneficio económico sin reparar en los daños sociales que pueden causar, también buscan nuevas maneras de esquivar estos controles. Los fraudes cometidos afectan, sobre todo, a la composición de los alimentos, de manera que puedan contener agentes, materiales o productos químicos capaces de ocasionar, a corto o largo plazo, daños en los consumidores finales del producto. A pesar de que no todos los fraudes suponen un riesgo para la salud, los consumidores exigen que la calidad de los productos que adquieren tenga unos estándares elevados. Es en este punto donde se producen multitud de fraudes, que juegan con la calidad de los productos que se hallan en el mercado. Así, por ejemplo, es posible que un producto en cuya etiqueta se indique la marca “Denominación de Origen” realmente no se adapte a las características que esta marca exige...
The controls and legislation that currently guarantee food safety for consumers are constantly evolving and developing, always looking for new ways to detect fraudulent activities that may pose a risk to people’s health. This is due to the fact that these activities, which seek economic benefit without regard for the social damage they can cause, also search for new methods to evade these controls. The frauds committed mainly affect the composition of foods, leading to mixtures with exogenous agents, materials, or chemical products capable of causing, in the short or long term, damage to the end consumers of the product. Although not all frauds pose a risk to health, consumers demand that the quality of the products they acquire has high standards. In this manner, numerous frauds take place, leading to diminished qualities of the products on the market. For example, it is possible that a product labelled as “Designation of Origin” does not truly satisfy the requirements defined...
