La ocratoxina A (OTA) es una micotoxina de gran relevancia debido a su alta prevalencia y toxicidad. Esta toxina aparece frecuentemente en numerosas materias primas y productos alimentarios, pudiendo originarse tanto durante el cultivo como en el procesado y almacenamiento, por lo que se puede encontrar a lo largo de toda la cadena alimentaria. Por estos motivos, para garantizar la seguridad alimentaria, es necesario reducir su presencia a valores tan bajos como sea técnicamente posible.
